We rebuild the to-be with real items, customers and orders. That makes the new system visible before a decision is made, and lets us check whether everything is covered.

After this track you have the as-is and the to-be on paper, the replace-or-integrate choice per application, a proof of concept in Odoo and a phased plan. Everything we write down stays yours.
